This is going to be a long week...
I wasn't feeling good over the weekend, so yesterday Andy picked up a pizza from one of those take & bake places for dinner yesterday, and we had the leftovers today for lunch. To be fair, I can't honestly say that there were forbidden ingredients in the pizza as I haven't seen the list of ingredients, but as hard as I have to look to make sure nothing we buy has unknown substances, the odds of us walking in and ordering a pizza and having not a single forbidden thing on it must be about a thousand to one. So, we're going to assume it was forbidden. It tasted like it.
In other news, the temperature reached 60 degrees today and I planted kale and beets! I have NO idea what we'll do with either one, but they both seem to be cold-weather friendly, so we're going to try them. Look for borscht at a future soup night!

Pickle the beets - that's what they do down south; you can just use apple cider vinegar, or you can use some spices.
Google Books is a treasury of 19th century books in pdf form; look for cookbooks using the "full view" option. It's crazy - but you'll find plenty to do with things like beets and parsnips, and some of them don't sound too bad. Just stay away from things like boiled celery.
Home grown beets are excellent just cooked and eaten- pick them young- less than 2" in diameter- snip the greens off about an inch from the end (leaving the green top on), wash them, dump them in a pot with water, boil until tender (you can easily stick a fork in).
Then drain them immediately and run cold water over them. The skins crack and you reach into the pot and just quickly peel the skins off with your fingers. The naked beets go into a bowl (and are still hot enough to eat). Yum! I need to check my local farm stand for these - grocery store beets are too big and old to be eaten this way.
And for a healthy two-fer, you can wash and steam the beet greens, which are quite tasty all by themselves.
