Zucchini
Tomorrow is the big Zucchini Cook-Off at Chateau Sutton-Goar, so in preparation, I harvested the almost-boat-sized zucchini I'd been saving and first made a chip dip using dehydrated vegetables, nonfat yogurt, and zucchini (which is thankfully better than it sounds) and a chocolate zucchini cake (which we haven't tried, but how bad could chocolate cake really be?) To top off this gourmet spread, I think I'll make a zucchini-wheat berry salad tomorrow. It will be interesting to see what everyone else brings....and how many people show up. I admit, I don't know if I'd drive somewhere for an all-zucchini meal, even if there was a competition involved......
